I'm too busy cooking...
Ginger Molasses Cookie
$3.45 each at Starbucks. This makes ~30-40 cookies. Math is fun.
Ingredients
0.25 cup Molasses
1 Egg
2.25 cups All-purpose Flour
2 teaspoons Baking Soda
0.5 tablespoon ground Ginger
1 teaspoon ground Cinammon
0.5 teaspoon ground Cloves
0.5 teaspoon Salt
0.75 cup Unsalted Butter (room temp)
0.5 cup White Sugar
0.5 cup Dark Brown Sugar, packed
Directions
Whisk the Flour, Baking Soda, Cinnamon, Cloves, Ginger and Salt in a medium-sized bowl
In another bowl, use a hand mixer to cream the Butter and Sugars
Mix in the Molasses and Egg and continue to beat until combined
Add the dry ingredients a bit at a time and continue to beat together until it's a dough
Cling-wrap the dough air-tight and place in the fridge for 1-2 hours
Preheat oven to 350F, and line a sheet pan with parchment paper
Fill a small bowl with White Sugar
Make roughly 1-inch balls from the dough, roll them in the sugar bowl (cover completely) and then place on the baking sheet
Bake in batches for 8-10 minutes; the cookies are ready when they've started to crack on top - don't overcook!
