Pork Meatballs Au Gratin
Very tasty pork meatballs and zucchini all in one pan, easy to make!
Ingredients
0.5 pound Ground Pork
1 handful Fresh Basil Leaves
1 Zucchini
1 handful Sun Dried Tomatoes
0.5 Onion, diced
2 cloves Garlic, minced
0.5 cup shredded Mozarella
1 small jar Marinara Sauce
0.25 cup Water
Salt
Pepper
Cooking Oil (for pan-frying)
Directions
Cut the zucchini lengthwise, then into 1 inch pieces at an angle
Discard basil leaf stems, and rough chop the leaves
Small dice sun-dried tomatoes
Combine the ground pork, sun-dried tomatoes, 1/2 the garlic, and 1/2 the basil in a bowl
Add a generous amount of salt & pepper to the bowl and mix it in
Heat a pan on medium-high heat with a drizzle of oil (I like avocado oil, personally)
When the pan is heated, form the meat into balls, about 2 inches thick (should make 8-10) and add to the pan
Cover the meatballs and cook, flipping and turning occasionally, 7 minutes (or until cooked through)
Move the balls to a plate
Add another drizzle of oil to the pan, and then the onion and remaining garlic
Saute the onion and garlic for 30 seconds, stirring frequently
Add the zucchini and saute, 3 minutes
Add the marinara sauce and water to the pan and season with more salt & pepper, to taste
Mix and cook until thickened
Add the meatballs and mix, cook for 1-2 minutes
Add the cheese and mix
Serve and enjoy!
